| Shakespeare drank Mead, as did Queen Elizabeth I. In fact, one of the earliest published recipes for Mead was by Sir Kenelme Digbie in the 1600s . . . whoa. What possibly do you think Her Highness had in mind . . . oh my. Speaking of Queens, Queen Anne, another English royalty, used a concoction made of honey and oil to enhance her long and silky hair.
The last mistress of Louis XV, the infamous Madame du Barry, used honey as a form of facial mask. And Chinese women have a ancient tradition of using a pasty blend of honey and ground orange seeds to keep their skin blemish free.
Not to be outdone, Cleopatra of Egypt regularly took honey and milk baths to maintain her siren reputation, and ravishingly youthful appearance. Further, the Egyptians offered honey to the High God of fertility, Min . . . that naughty little devil!

HONEY ALMOND BAKLAVA
For that special Honey in your life. Who has to know it's easy, I won't tell . . . so why should you . . . ;)
1-1/2 lb. blanched almonds, finely grated or ground
1 c. white granulated sugar
Grated peel of 1 orange (commonly called zest)
1 tsp. ground cinnamon
1-1/2 c. sweet butter, melted (unsalted butter, sometimes whipped)
1 lb. prepared Phyllo Dough, (a paper-thin, pastry dough, available in the frozen food case)
Whole cloves, as needed (NOT ground)
1-1/2 c. honey
1) Toast the grated or ground almonds in a preheated 300 degree oven for 10 minutes, or until lightly browned.
2) Mix with 1/2 cup of the sugar, orange peel, and cinnamon.
3) Butter a 10 x 14 inch baking pan and spread butter on the Phyllo sheets. Line the pan with 3 buttered sheets, cut to fit the pan. Sprinkle lightly with some of the nut mixture and repeat, alternating 2 sheets of buttered Phyllo and the nut mixture, ending with Phyllo.
4) Cut into 1 inch by 1 1/2 inch triangles. Insert a whole clove in the center of each triangle.
5) Bake in a preheated 325 degree oven for 50 minutes, or until golden brown.
6) Meanwhile, bring to a boil the remaining 1/2 cup sugar, and 1/2 cup water. Add the honey, and let simmer a few minutes; then cool.
7) Cut through pastry diamonds completely, and while hot, pour over cool honey syrup.
Makes about 4 dozen pieces. Let her take some home to show her wickedly jealous girlfriends. Who knows . . . remember those pesky honey bees . . . perhaps a little pollen for the future? . . . smirk!
